Bikini

Yields 10 servings

Ingredients for the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Cocktail (produces 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

To prepare the Syrup: Combine the listed components into a pan, bring to a simmer, mixing until the sugar dissolves. After that, take off the burner allowing it to reach room temperature completely. Decant to a clean bottle, close it and refrigerate it chilled, where it will keep for up to four weeks.

To make Cocktail Base: Pour all the liquid ingredients into one sizeable container, let it rest for an hour, then filter it preferably using cheesecloth, so it's perfectly clear.

To serve: Add 85ml of your batch mix to a cocktail shaker containing ice, and agitate gently for one minute to chill. Strain into a cold coupe glass or equivalent, top with the cranberries and complete it using a light spray of mandarin oil over the top.
